Ingredients:
2 cups of dry fava beans, peeled and soaked for 8-12 hours.
1 large onion, roughly chopped
1cup fresh parsley, finely chopped
1cup fresh coriander, finely chopped
4 cloves of garlic
1 stick leek, roughly chopped
1 stick leek, roughly chopped
1 hot chili pepper, roughly chopped
1 teaspoon cumin
Salt
Ground coriander and sesame for frying

Drain the soaked beans and combine with onion, garlic, coriander, parsley, leeks and green chilli season with salt and cumin.

Pass the mixture through a food processor. pulse until minced but not puréed; add water tablespoon by tablespoon if necessary to allow the machine to do its work, but keep the mixture as dry as possible.

Refrigerate for an hour before frying. Use the falafel mould or shape with wet hands about 8cm in diameter and 2cm thick then dip in sesame and ground coriander mixture.

Heat vegetable oil to 175c in a deep pot or wok and fry 1 ball to test. Then fry about 6 balls at once for a few minutes on each side, or until golden brown. Drain on paper towels. Stuff half a pita with falafel balls, chopped tomatoes, onion, green pepper, and pickled turnips. Drizzle with tahini sauce.
