Ingredients:

400g fettuccine (any other pasta shapes)

400g mushrooms (recommend shiitake), chopped

3 tablespoons butter

1 small brown onion, finely chopped

3 cloves garlic, minced

Parmesan cheese, for serving

2 cup heavy cream

1 cup chicken stock

2 tablespoon balsamic vinegar

Salt & ground black pepper

Directions:

    Cook fettuccine in a large pan of salted boiling water for 10-12 minutes or according to the packet instructions.

    Melt butter over medium-high heat in a large pan. Sauté chopped onion for about 5 minutes.

    Add mushrooms and garlic and sauté for about 5 to 10 minutes, allowing the 'mushrooms to cook down until they're browned and fragrant.

    Add the cream, chicken stock, and balsamic. Let boil for about 10 minutes until the sauce has thickened to your desired consistency. Season it to taste with salt and pepper.

    Pour sauce and mushroom over pasta. Sprinkle with Parmesan to serve.
