To prepare orange fillet, you have to peel oranges thickly to remove all the white pith, discard skins. Chop oranges roughly and discard the seeds.

Place oranges and grated carrots in a deep cooking pot, add the sugar then refrigerate for 1 hour before cooking.

On a medium heat, stir jam with all spices constantly without boiling until sugar is dissolved. Then, let it boil rapidly uncovered without stirring for about 30 minutes or until jam will jell when tested on a cold saucer.

Add the lemon juice and orange zest. Stand 5 minutes, stir in brandy, pour into hot sterilised jars; seal when cold.
