Potatoes gratin with caramelized onions

Creamy cheese sauce gives the dish a richness....

Ingredients:

2 cups heavy cream

4 crushed garlic cloves

3 peppercorns

1 tablespoon oil

1 large onion, thinly sliced

3 large fine potatoes, peeled

1 cup emmantal cheese, grated

2 sprigs fresh thyme

Salt and ground pepper to taste

1/2 cup Parmesan cheese, grated

Directions:

    In the saucepan, Add cream, gar­lic, pep­per­corns, thyme, pepper and salt to just under the boil reduce heat to low, cover and sim­mer for 15 min­utes set aside.

    Heat your oven to 150° C.

    Mean­while, in skil­let, heat oil over medium-low heat and cook onion, stir­ring often until light brown, about 45 min­utes. Slice pota­toes as thinly as pos­si­ble.

    Layer pota­toes in a bak­ing tray, top with caramelized onion layer and 1/4 of the cheese mix. Repeat twice. Top with remain­ing pota­toes. Strain cream mix­ture over pota­toes. Sprin­kle with remain­ing cheese.

    Bake in 150° C oven from 90 to 120 minutes.
