Potatoes gratin with caramelized onions
Creamy cheese sauce gives the dish a richness....
Ingredients:
2 cups heavy cream
4 crushed garlic cloves
3 peppercorns
1 tablespoon oil
1 large onion, thinly sliced
3 large fine potatoes, peeled
1 cup emmantal cheese, grated
2 sprigs fresh thyme
Salt and ground pepper to taste
1/2 cup Parmesan cheese, grated

In the saucepan, Add cream, garlic, peppercorns, thyme, pepper and salt to just under the boil reduce heat to low, cover and simmer for 15 minutes set aside.

Heat your oven to 150° C.

Meanwhile, in skillet, heat oil over medium-low heat and cook onion, stirring often until light brown, about 45 minutes. Slice potatoes as thinly as possible.

Layer potatoes in a baking tray, top with caramelized onion layer and 1/4 of the cheese mix. Repeat twice. Top with remaining potatoes. Strain cream mixture over potatoes. Sprinkle with remaining cheese.

Bake in 150° C oven from 90 to 120 minutes.
