
Ingredients:
1kg tomatoes
200 red onions
8 garlic cloves, halved
1 large red bell pepper
1 cup white vinegar
1/2 cup sugar
4 tablespoons extra virgin olive oil
Salt & fresh ground black pepper
1 cup fresh basil leaves
3 bay leaves
1 red chilli pepper
100g Parmesan cheese, grated

Preheat the oven to 200°C

Prepare tomatoes, pepper and red onions by peeling and slicing into rough quarters. In the roasting tray place tomatoes, onions, garlic, bay leaves, chilli and bell pepper.

Drizzle with the vinegar and olive oil and sprinkle the sugar. Season with a good pinch of salt and black pepper.

Give the tray a good shake to ensure everything is evenly coated. Roast in the oven for 30–35 minutes or until the vegetables have softened. Stir from time to time.

Remove the bay leaves, With a hand blender and mash, the fresh basil leaves all the ingredients together until you have a thick mushy sauce.

Add the parmesan cheese and mix together well, freeze your sauce in a food container. Try with pasta, lasagne and pizza.
