Ingredients:

3 medium whole striped mullet or bass

Sea Salt

100 g wheat bran

For the marinade: 10 garlic cloves, peeled and crushed

1–2 chilies, finely chopped

Juice of 3 limes

2 tablespoons olive oil

2 tablespoon ground cumin

1/2 cup coriander leaves

2 tablespoon soy sauce

Directions:

    For the marinade: Combine all the ingredients together and pour into a food processor, pulsing just a few times to get it to an even consistency. Set this mixture aside.

    Season fish well with Salt and using a spoon, fill the fish with 1/2 of the mixture, Rub into the skin. Set aside. Leave to marinate for at least 30 minutes.

    Put wheat bran it in a shallow dish or on a plate, and coat slices in the bran very well.

    Preheat a chargrill or a barbecue on high. Cook the fish side down for 5 mins, until skin is well browned then cook the other side for 5 mins or until finely cooked depending on the size of the fish.

    Brush the grilled fish with rest of the marinade sauce and Serve.
