
Ingredients:
4 fresh bass, gutted and cleaned
2 lemons, sliced
2 rosemary sprigs, halved
12 bay leaves
6 tbsp olive oil
2 cloves garlic, crushed
Sea salt and cracked cumin seeds
1 spicy red chili pepper, sliced
1 tbsp ground cardamoms
2 tbsp soy sauce

Preheat the oven to 200°C, fan 180°C. Using a sharp knife, slash the skins of each side of the bass.

Put a few lemon slices and one rosemary sprig into the cavity of each fish.

Place 2 tablespoons of the oil,crushed garlic cloves, salt and cumin, chili's, soy sauce and cardamoms in a large deep-sided roasting tray and toss to combine.

Season each with this mix and rub the marinade into it.

Scatter the bay leaves over a large baking tray and lay the fish on top.

Drizzle over the olive oil and roasted in the oven for 20 minutes, turning halfway through.
